Are you using the Contact Applicant feature of the Submitted Forms to send your email?
It's a good idea to add a Template feature to the Contact Applicant – I would suggest that you add the idea to our list of feature requests and ideas here:

We send out an e-mail two weeks after an adoption to do a follow-up. I currently copy and paste three different form letters to send out (male, female, or two cats). Is there a way to create templates so I don't have to do this.
