The custom question you ask on your applications do not update the Contact record. Only the fields from the Contact that are selected on the Online Form will update the Contact. You could add a Request to add this field to the list of Contact fields. Here's the instructions on how to make a request for future enhancements:

Our adoption agreement asks for the person's place of employment. But this info is not being transfered into the conacts info. We are trying to do a project which needs this info in a report. Can you see why this data is not flowing from the adoption agreement into the contact's profile?
