This is very important to our group as well! We would be happy to see it as a field on the animal or a field on the adoption screen. I think it would be preferable to be on the adoption screen because sometimes the animals are returned and re-adopted. Having it on the adoption screen would the Adoption Coordinator to the specific adoption (animal+adopter) rather than only having one field on the animal profile that would get over-written when the animal is adopted a second time.

One thing we do a bit differently than how you've setup your service is we have a volunteer position called an "Adoption Coordinator" who act as an intermediary between the fosters, and potential adopters.
We've currently implemented the same concept within the site just using the 'foster' fields you've created... but was wondering if it would be possible to create a similar field for "Adoption Coordinators" so we can keep track of the foster for a dog, as well as its "Adoption Coordinator". Ideally, it would function exactly like the foster fields do within the site, just called "Adoption Coordinator"
