To comply with anti-spam laws, there isn't a way for you to update this for users. The best way is to ask those folks to subscribe again.

We have a couple of people that say that they did not unsubscribe, yet they are marked as such and no longer receive our emails as a result of it. The only workaround I know is to use a different email address, but there should be a way to reverse something like this...
How do you ask someone to subscribe again? I want to receive marketing emails but currently I am unsubscribed (I was testing the feature not knowing I couldn't reverse it).

You would go to the organization's website and use the sign-up widget on their website.
