The built-in fields cannot be removed from the built-in Contact Us page.
I would recommend creating a custom webpage for this.
To remove the built in contact us page from your menu and add your custom web page to your menu, you will need to create a Custom Menu. If you haven't done this, here's how to create a custom menu: Creating a custom website menu

In updating the built-in contact us page I see my updates are added to the Additional Contact Info:.
How can i remove the 'built-in' fields that are shown and only show the Additional Contact Info.
I see you can 'prevent the street address, phone and email' from showing but the text Write us text and company name still shows.
Is it easiest to simply de-activate the built in page and just create a new page
